Country-Style Soup in Clay Pots is a recipe that brings to life the culinary tradition of the Romanian village. Ingredients:

For the soup:
- 6 cups water
- 500 g fatty beef brisket
- 8 small potatoes
- 2 carrots
- 2 onions
- 1 parsley root
- ½ celery root
- 1 cup green beans
- ¼ head of cabbage
- 2 tomatoes
- 2 cups borș (or a bit of citric acid)
- Bay leaves
- Salt, to taste
- 1 hot chili pepper
- Lovage greens
- 1 tablespoon fresh herbs (dill, parsley, tarragon, celery), chopped
For the dough seal:
- 1 cup wheat flour
- ½ cup water
- Salt, to taste
Preparation Method:
Preparing the Soup:
- Cut the beef into bite-sized pieces and place in a pot with cold water. Boil until half-cooked, skimming off any foam.
- In each clay pot (“ulcică”), layer the beef, carrots, parsley root, celery, cabbage, and onions, all finely chopped. Add the green beans, whole potatoes, sliced tomatoes, and bay leaves.
- Pour the prepared borș and beef broth into the pots. Add slices of hot chili and fresh lovage.
- Seal each pot with a thin layer of dough (see below).
Preparing the Dough Seal:
- In a bowl, mix the flour with salted water to form an elastic dough. Divide into four equal balls and rest for 15 minutes.
- Roll each into a 5–6 mm thick circle, enough to cover the top of each pot.
Baking:
- Place the sealed clay pots in a preheated oven at 170–180 °C.
- Bake for one hour.
Serving:
Serve the soup directly in its clay pot. At the table, ladle into ceramic bowls and use the dough seal in place of bread.
