Rinse all the vegetables thoroughly. Cut the tomatoes and cucumbers into slices or rounds, and slice the bell peppers into thin strips. Finely chop the scallions and chosen herbs.

2. Combine in a bowl:
Place the sliced vegetables, scallions, and herbs in a spacious bowl. Add sea salt to taste and toss gently to preserve the crunchy texture of the vegetables.

3. Dress and garnish:
Just before serving, stir in sour cream or drizzle with oil, according to your preference. Garnish with olives and a few sprigs of fresh herbs for an attractive presentation.

What makes Chișinău-style salad special?
This Moldovan-inspired salad celebrates seasonal vegetables, combining tomatoes, cucumbers, and bell peppers with a creamy or oily dressing for an authentic, refreshing flavor.

How to choose the best vegetables?
Select ripe yet firm tomatoes, and cucumbers and bell peppers that are crisp and free of blemishes for optimal crunch and taste.

Role of fresh herbs:
Herbs such as dill, parsley, or basil add a burst of aromatic freshness, balancing the vegetables’ flavors and intensifying the salad’s overall taste.

Alternatives to sour cream:
If you prefer not to use sour cream, substitute with olive oil, cold-pressed sunflower oil, or Greek yogurt—each lends a unique flavor and texture.

Maintaining crunch and color:
Handle the vegetables gently and dress the salad just before serving to preserve their vibrant color and crispness.

Why olives?
Olives introduce a pleasant salty contrast and Mediterranean flair, complementing the natural sweetness of the vegetables.

Customization options:
Boost the salad’s heartiness by adding feta cheese, boiled eggs, avocado cubes, or grilled chicken slices for a more substantial dish.

Pairing for a complete meal:
Enjoy as a side with grilled meats, fish, or vegetarian mains, or serve as a standalone entrée with whole-grain bread or a portion of polenta.

Flavor-boosting seasonings:
Enhance complexity with freshly cracked black pepper, red pepper flakes, a squeeze of lemon juice, or a drizzle of balsamic vinegar.

Attractive presentation:
Layer ingredients in a transparent bowl or on a wide platter, and decorate with olives, fresh herb sprigs, and optional lemon slices or cherry tomatoes for striking visual appeal.
