  • 500 g fatty beef brisket
  • 8 small potatoes
  • 2 carrots

  • 1 parsley root
  • ½ celery root
  • 1 cup green beans
  • ¼ head of cabbage
  • 2 tomatoes
  • 2 cups borș (or a bit of citric acid)
  • Bay leaves
  • Salt, to taste
  • 1 hot chili pepper
  • Lovage greens
  • 1 tablespoon fresh herbs (dill, parsley, tarragon, celery), chopped

For the dough seal:

  • 1 cup wheat flour
  • ½ cup water
  • Salt, to taste

Preparation Method:

Preparing the Soup:

  1. Cut the beef into bite-sized pieces and place in a pot with cold water. Boil until half-cooked, skimming off any foam.
  2. In each clay pot (“ulcică”), layer the beef, carrots, parsley root, celery, cabbage, and onions, all finely chopped. Add the green beans, whole potatoes, sliced tomatoes, and bay leaves.
  3. Pour the prepared borș and beef broth into the pots. Add slices of hot chili and fresh lovage.
  4. Seal each pot with a thin layer of dough (see below).

Preparing the Dough Seal:

  1. In a bowl, mix the flour with salted water to form an elastic dough. Divide into four equal balls and rest for 15 minutes.
  2. Roll each into a 5–6 mm thick circle, enough to cover the top of each pot.

Baking:

  1. Place the sealed clay pots in a preheated oven at 170–180 °C.
  2. Bake for one hour.

What makes Country-Style Soup in Clay Pots different from other soups?
Answer: The slow cooking in clay pots preserves and intensifies the natural flavors of the ingredients. Sealing the pots with dough adds a crisp texture and retains heat, creating an authentic traditional experience.

How do clay pots influence the soup’s taste?
Answer: Clay vessels have unique thermal properties that allow even cooking at moderate temperatures. This gradual release of flavors and retention of juices results in a richer, more aromatic soup.

Which ingredients are most important for authenticity?
Answer: Key ingredients include fatty beef brisket, authentic borș, fresh herbs (lovage, parsley), and garden vegetables (potatoes, carrots, celery, cabbage). Each element balances sweetness, acidity, and savor.

What role does the dough seal play?
Answer: The dough not only seals in flavors and heat but also serves as a rustic bread substitute. Crispy outside and soft inside, it soaks up the soup’s aromas for extra flavor.

How is the beef prepared?
Answer: Cut the brisket into pieces and boil in cold water, skimming foam to achieve a clear broth and remove impurities before slow cooking in the clay pots.

Why is borș important?
Answer: Borș adds a refreshing acidity that contrasts with the natural sweetness of the vegetables and the richness of the beef. It’s essential for the authentic Romanian taste.

How can this recipe be adapted for a vegetarian diet?
Answer: Replace beef with mushrooms (porcini or champignons) to add umami, and keep borș for acidity. You can also add more vegetables like zucchini or turnips to compensate for the lack of meat.

What other doughs can seal the pots?
Answer: Instead of plain flour dough, use puff pastry or a yeast dough for a richer, fluffier crust. Each alternative brings different textures and flavors.

How do you keep clay pots clean and maintained?
Answer: Wash gently with warm water—avoid harsh detergents. Let them air-dry completely and avoid sudden temperature changes to prevent cracking.

Which accompaniments pair best with this soup?
Answer: Serve with homemade bread, warm polenta, or pickled hot peppers. A simple red onion salad or assorted pickles also makes a perfect side.
