Tocăniță de porc în sos de ceapă, ardei, morcovi și usturoi
Ingrediente:
- 800 g carne de porc (pulpa sau gât)
- 2 cepe mari, tocate
- 2 ardei roșii, tăiați fâșii
- 2 morcovi, tăiați rondele
- 4 căței de usturoi, tocați
- 3 linguri ulei de măsline
- 2 linguri pastă de roșii
- 200 ml vin alb sec (opțional)
- 1 cană supă de carne (sau apă)
- 1 linguriță cimbru uscat
- 1 foaie de dafin
- Sare și piper, după gust
- 1 linguriță zahăr (pentru a echilibra aciditatea roșiilor)
- Pătrunjel proaspăt pentru decor (opțional)
Instrucțiuni:
- Pregătirea cărnii:
- Taie carnea de porc în cuburi de aproximativ 3-4 cm.
- Condimentează carnea cu sare, piper și cimbru.
- Rumeniți carnea:
- Într-o tigaie mare sau o oală adâncă, încălzește uleiul de măsline.
- Adaugă carnea de porc și rumenește-o pe toate laturile până devine aurie. Scoate carnea din oală și pune-o deoparte.
- Gătiți legumele:
- În aceeași tigaie, adaugă ceapa și călește-o până devine transparentă, aproximativ 5-7 minute.
- Adaugă ardeii și morcovii și gătește-le împreună cu ceapa pentru încă 5 minute, amestecând ocazional.
- Adaugă usturoiul și mai gătește 1-2 minute, până când își eliberează aroma.
- Adăugați pasta de roșii și lichidul:
- Pune pasta de roșii în oală și amestecă bine pentru a se combina cu legumele.
- Dacă folosești vin alb, adaugă-l acum și lasă-l să fiarbă timp de 2-3 minute, pentru a evaporă alcoolul.
- Adaugă supa de carne (sau apă), foaia de dafin și zahărul.
- Aduceți totul la fierbere.
- Gătiți tocănița:
- Pune carnea de porc înapoi în oală și amestecă bine.
- Acoperă oala și lasă tocănița să fiarbă la foc mic timp de 1-1,5 ore, până când carnea este fragedă și sosul s-a îngroșat.
- Verifică din când în când și mai adaugă lichid dacă este necesar.
- Finalizare:
- La final, gustă tocănița și ajustează cu sare și piper, după preferință.
- Servește tocănița de porc cu garnitura preferată: cartofi piure, mămăligă sau orez.
- Decorează cu pătrunjel proaspăt tocat, dacă dorești.
