Countryside Soup

Ingredients:
- 6 cups of water
- 500 g of lamb meat
- 1 cup of white beans
- 2 potatoes
- 2 onions
- 1 carrot
- 1 parsley root
- ½ celery root
- 3 tomatoes
- 2 cups of acidic borscht (see the “Country Borscht” recipe) or a pinch of citric salt
- Salt
- 1 hot chili pepper
- 1 tablespoon of chopped lovage
- 1 tablespoon of chopped herbs (dill and parsley)
Preparation Method:
- Boil the beans until they are half cooked.
- Cut the meat into small pieces, place in cold water, and cook until done.
- Strain the broth, return it to the pot, then add the beans, sliced parsley and celery roots.
- Five to seven minutes before removing from heat, add the chopped tomatoes, lovage, borscht, and chili pepper. Bring to a boil, season with salt to taste, and stir in the chopped herbs.
