Cheese-Stuffed Bell Peppers
Ingredients

- 4 medium bell peppers (preferably red or orange)
- Fresh parsley (for garnish)
For the filling:
- 1½ cups grated cheese
- 100 g butter
- 3–4 garlic cloves
- 2 tablespoons chopped fresh herbs
- 10–15 pitted olives (optional)
- Ground black pepper, to taste
Preparation
1. Preparing the peppers:
Wash the bell peppers, then slice off their tops with the stems and remove the seeds, keeping the peppers whole.
Blanch the peppers in hot water for 1–2 minutes, then drain and pat dry on a kitchen towel.
2. Making the filling:
Grate the butter while cold.
In a bowl, combine the grated butter with grated cheese, crushed garlic, chopped fresh herbs, ground pepper, and salt if needed.
Slice the olives thinly and fold them into the mixture if using.
3. Assembling the peppers:
Fill each pepper with the cheese mixture, pressing gently to pack.
Cut the stuffed peppers into thick slices and arrange them on a platter decorated with fresh parsley.
4. Serving:
Serve the cheese-stuffed peppers cold as a delicious, healthy appetizer.
