Limba cu Măsline – Rețeta Tradițională care Îmbină Eleganța și Savoarea
Limba cu măsline este un preparat românesc rafinat, apreciat pentru textura fragedă a limbii și gustul intens al sosului de roșii și măsline. Cu o istorie îndelungată în bucătăria tradițională, această rețetă impresionează prin combinația de arome și aspectul său deosebit. Fierberea îndelungată a limbii o transformă într-un preparat delicat, care se topește în gură, iar sosul bogat, ușor acrișor datorită măslinelor și sucului de lămâie, completează perfect întregul ansamblu.
Ideală pentru mesele de sărbătoare sau prânzurile speciale, limba cu măsline este adesea servită alături de piure de cartofi sau mămăligă, astfel încât fiecare îmbucătură să fie o experiență culinară completă. Această rețetă aduce un strop de eleganță în bucătăria de acasă și păstrează autenticitatea gusturilor românești.
Ingrediente
- 1 kg limbă de vită sau porc
- 200 g măsline negre, fără sâmburi
- 1 ceapă mare, tocată fin
- 1 morcov mic, tăiat rondele subțiri
- 2-3 linguri de ulei
- 200 ml suc de roșii sau 2-3 roșii mari, tocate fin
- 1 lingură pastă de tomate
- 1 frunză de dafin
- Sare și piper, după gust
- Zeama de la o lămâie (pentru un plus de aciditate)
- Verdeață proaspătă (pătrunjel) pentru decor
Instrucțiuni
- Pregătirea limbii:
- Spală bine limba sub jet de apă rece și pune-o la fiert într-o oală mare cu apă și puțină sare. Fierbe-o timp de aproximativ 1-1,5 ore, până devine fragedă.
- După fierbere, scoate limba din apă și las-o să se răcească puțin. Curăță pielea albă de pe suprafața limbii, apoi taie-o în felii potrivite.
- Prepararea sosului:
- Într-o tigaie adâncă sau o cratiță, încinge uleiul și adaugă ceapa tocată. Călește ceapa până devine translucidă, apoi adaugă morcovul și gătește-l până se înmoaie.
- Adaugă sucul de roșii, pasta de tomate, frunza de dafin și amestecă bine. Lasă sosul să fiarbă la foc mic pentru 10-15 minute, până când se îngroașă ușor și devine aromat.
- Adăugarea limbii și a măslinelor:
- Pune feliile de limbă în sos și adaugă măslinele. Dacă sosul este prea gros, poți adăuga puțină apă sau supă de legume pentru a subția consistența.
- Lasă preparatul să fiarbă la foc mic pentru încă 10-15 minute, până când limbă se îmbină perfect cu aromele sosului.
- Ajustare și servire:
- Adaugă zeama de lămâie, sare și piper după gust, pentru un echilibru plăcut al gusturilor.
- Servește limba cu măsline fierbinte, decorată cu pătrunjel proaspăt.
