Bird Giblet Broth
A traditional Romanian recipe brimming with flavor and a delightful aroma, Bird Giblet Broth is the perfect dish for chilly days. With a lightly sour broth, tender bird giblets, fresh vegetables, and homemade noodles, this soup is a delight that brings the whole family to the table.
Ingredients:
- 6 cups of water
- 500–700 g of bird giblets
- 1½ cups of homemade noodles
- 1 carrot
- 2 parsley roots
- 1 celery root
- 2 onions
- 1 tablespoon of oil
- 2 cups of acidic borscht or a pinch of citric salt
- Salt
- Bay leaves
- Whole black peppercorns
- 1 tablespoon of chopped fresh dill
For the noodles:
- 1½ cups of wheat flour
- 2 eggs
- ⅓ cup of water
- Salt
Preparation Method:
- Wash the giblets thoroughly and soak them in cold water for 1–2 hours. Then place them in cold water, bring to a boil, and skim off any foam. Simmer over low heat until tender.
- Finely chop the onions and sauté them in oil. Slice the parsley roots, celery root, and carrot into thin rounds.
- Once the giblets are cooked, add the prepared vegetables and cook for 15–20 minutes. Stir in the borscht or citric salt, season with salt, peppercorns, and bay leaves.
- Let the broth simmer for another 4–5 minutes. Add the chopped fresh dill and adjust seasoning to taste.
For the noodles:
- Place the flour in a bowl and make a well in the center. Add the eggs, water, and a pinch of salt, then mix to form a firm dough. Let it rest for 10–20 minutes.
- Roll out the dough on a flat surface, cut into thin strips, and allow to dry slightly.
- Add the noodles to the boiling broth and cook until tender, about 3–5 minutes.
