Ingredients

  • 200 g white beans (dried) or 1 can of white beans
  • 1 small onion (preferably red), finely chopped
  • 100 ml sunflower oil or olive oil
  • Juice of half a lemon (or to taste)
  • Salt and pepper, to taste
  • Optional: 1 teaspoon mustard for extra flavor

Instructions

  1. Preparing the beans:
    • If you use dried beans, wash them well and leave them to soak in cold water overnight. The next day, boil the beans in water with a little salt until they become very soft (approximately 1–1.5 hours). Drain the water and let the beans cool completely.
    • If you use canned beans, drain the liquid well and rinse the beans under a stream of cold water.
  2. Mashing the beans:
    • Put the cooled beans in a blender or use a hand mixer to turn them into a fine paste.
    • Gradually add the oil, as in a mayonnaise, stirring continuously to obtain a creamy and homogeneous consistency.
  3. Flavoring the salad:
    • Incorporate the very finely chopped onion and the lemon juice. Add salt and pepper to taste.
    • If you wish, you can add a teaspoon of mustard to give it a slightly spicy taste.
  4. Serving:
    • Transfer the bean spread into a serving bowl and decorate with fresh parsley or finely chopped green onion.
    • Serve the Romanian bean spread on slices of fresh or toasted bread, together with vegetables such as tomatoes, cucumbers, and radishes.
